Weekend Fun

Stetson and I escaped to my parents house this weekend! They live four hours away and it's always a worry how Stetson will do. We don't have an iPad or any movie playing device so I try to get creative. I always buy a new book, plus pack his favorite books to look at. I also make sure I have plenty of snacks at arms reach, as well as his toys and books. I also stop half way and let him get out and wiggle for 10 minutes. Overall, he's a really good traveler!

My parents and grandparents live out in the county. It's so peaceful and calming. Just add ice tea and a rocking chair and life is made. I love sharing the country with Stetson. He can run for days and still never reach the road.


My grandparents live on 20 acres of land.


Seeing him run through the sprinklers reminded me of when I was little running through the sprinklers at my grandparents. 


He loves Watermelon!



My mom got Stetson an ATV for his birthday. The noise at first really spooked him and he did not like getting on it. I am a mean mommy and made him ride anyways. He's becoming more and more use to it and this time he even held the handle bars. 



Bentley LOVES riding on it too!


My mom and I love to garage sale, like love it! Look at this sweet metal table she scored for $10 bucks. It screamed Joanna Gaines from fixer upper. 


We visited my aunt at her flower farm. She has the largest flower farm in Idaho. Her flowers were used in For Love of Lemons wedding last summer in Jackson Hole, WY!! Aren't her yellow peonies just gorgeous.






If I haven't said it enough, Native shoes are the BEST. Cuter than crocs, they slip on easy and he can go get as dirty as he wants because I just have to hose them down when he is done. 




The Maxi Cosi car seat is so awesome. It looks so comfortable and stylish. I feel really safe having Stetson ride in it. 


So tired after a long, fun weekend!!

Tasty Tuesday || Zucchini Enchiladas

One of my favorite things is make up my own recipes. Sometimes I'm way to lazy to get to the store OR meal plan for the week. I typically buy a bunch of produce for the week, and come dinner time, I just make it up on the fly.

Currently, I am obsessed with Trader Joe's tomatillo salsa. It's the perfect spicy and can help doctor any meal. I was making butternut squash enchiladas in the winter but thought I would mix it up for Summer.


Ingredients:

2 Yellow Squash
2 Zucchinni Squash
1 Small Chopped Onion
1 Pckge of Ground Chicken
1 Jar of Tomatillo Sauce
Parmesan Cheese
Cilantro

Slice of the squash'

In a greased baking dish, spread some tomatillo sauce on the bottom.

Layer the sliced zucchini around the bottom of the pan.

Sprinkle the onions and sauce on top.

Add another layer of squash around the perimeter of the baking dish.

Sprinkle a little bit of Parmesan cheese on top and cover with foil.

Bake at 375 for 50 minutes.


Start to brown your ground chicken 10 minutes before the timer goes off. Cook till it's almost fully done.

After 50 minutes, remove foil and add chicken, the rest of the tomatillo sauce and cilantro.

Bake uncovered for the remaining 10 minutes!

Walla! Garnish with an avocado and cilantro and a little bit of cheese!

Guilt Free, Carb Free, Enchiladas.

OH did I forget to mention they were Tortilla FREE! If you wanted to add tortilla to the dish I would add them before the squash layers.

The tomatillo sauce does all the work for you and leaves even the pickiest eaters satisfied!!

Now, I don't feed Stetson the tomatillo sauce. It's still to spicy for him. But I do set aside some ground chicken and squash for him.

Pool Ready: Mama & Baby Girl

Navy blue + green + gold are my favorite colors right now!  I love the way the baby swimsuit coordinates the green to match mom ;)  I can't resist matching Charlotte as often as possible!  My neighborhood pools open this month and I couldn't be more excited to take Charlotte swimming for the first time!  She was born last July, but we had an extremely hot summer so I wasn't able to take her outside much....and definitely not to the pool.  This summer she will be the perfect age for it. I'm so excited!!

Park Date

We love nothing more than being outside!  We are so excited to finally have such nice weather to enjoy outside with our babes. The neighborhood pool opens in less than a month now...so until then we will be chilling at the park! 

Two of our main park essentials are a good sun hat and a comfy picnic blanket.  

I found this picnic blanket at Target of course and knew it was perfect for this summer! I love the bright colors and love that it folds up easily and has a handle to carry on my shoulder once folded up. I wasn't able to find this exact blanket online but linked on that's similar. I got this one in store just las week though so look in store!



She is seriously obsessed with dogs and I love it :)

SUN HATS!  I'm all about protecting Charlotte's little face in the sun, so besides putting sunscreen on her I think a hat is so important. She hates having the sun in her eyes so she likes them too! So far I've had luck with her not taking them off. I always love to match her so I was excited to pull out my favorite Panama hat so we could be twins :)

!5 Month Old Picks




Stetson is turning more and more into a little boy and less like a baby. It BLOWS my mind. As if it happened over night. He loves to run, climb and play. He is so curious about EVERYTHING, and loves to get into EVERYTHING. 

Here are some of our favorite things as of lately!

He loves puzzels, and the Melissa and Doug ones our are favorite! Stetson loves to tinker and loves trying to find the perfect fit for his shape box

Stetson learned to sip through a straw [insert the double hand praise emoji]. I have gone through a bunch of slippy cups trying to find the perfect one and I have landed on the tommee tippee slippy cups. They keep your liquids insulated, the straw is easy to sip through AND you don't pull your hair out trying to figure out how to clean and resemble the straw....do moms know what I am talking about?!?!

Stetson also loves to sit in furniture his own size! I loved the look of this land of nod outdoor chair. I kinda want it in my size! This teepee is so cute and it's from Costco!!

We just upgraded Stetson to a big boy car seat. I love the Maxi Cosi carseats. It comes with great safety options and the reviews on it can't be beat! They have a bunch of colors to fit you and your baby's personality and it has a cup holder which is genius!!!!!!

I still swaddle Stetson at night. Sounds silly but he loves it and loves to snuggle with his swaddles. I LOVE the print for the Orla Kiely collection at Target. For sure makes a great gift to give to any expecting Mother.
